This is my all-time favorite chocolate and peanut butter fudge recipe, also known as Buckeye Fudge. I have NO idea why it’s called Buckeye. Do you? Let me know if you have any insight into that name.

This goes great with an Urban Fantasy novel, your favorite drink, and a cozy corner of the couch.

Ingredients:

Peanut Butter Layer

1 cup peanut butter

1 cup butter (I know, right???)

1 tsp. vanilla extract

3 1/2 cups powdered sugar

Chocolate Layer:

1 1/2 cups semi-sweet chocolate chips

7 oz. sweetened condensed milk

2 tbs. butter

 

Instructions:

1. Peanut Butter Layer: combine peanut butter, butter, & vanilla in a microwave-safe dish. Melt in microwave for 90 seconds. Stir until well combined and creamy. Slowly add powdered sugar 1 cup at a time. Pour into a parchment paper-lined 8×8 baking dish.

2. Chocolate Layer: combine chocolate chips, sweetened condensed milk, and butter in a microwave-safe dish. Melt in microwave for 90 seconds. Stir until well combined and creamy. Heat an additional 30 seconds if needed to melt all ingredients thoroughly. Pour on top of peanut buttter layer.

3. Cover and refrigerate for 4 hours. Then, remove from baking and cut into bite size squares and store in an air-tight container in the fridge.
